These truffles are a quick + easy treat that you can mix up with just a few simple ingredients.
They have a sweet and rich taste from the combination of dates, coconut, and chocolate with the nice subtle undertone of earthiness from the addition of Blue Ninja ( blue matcha) which is made from blue butterfly pea flowers. You could even say they’re easy PEAsy to make! ;)
The hardest part about making these is not eating them all at once!
Ingredients

260g pitted Medjool dates

25g raw cacao or cocoa powder

60g ground almonds

15g unsweetened desiccated coconut

1 tsp Blue Ninja powder

1 tsp Blue Ninja powder + 30g desiccated coconut for coating
Directions

Blend dates to a paste in your food processor.

Add cacao powder, ground almonds, coconut and Blue Ninja powder.

Blend until the mixture comes together in a ball.

Divide into 14 even-sized balls and roll between the palms of your hands so they are nice and smooth.

Mix together the remaining blue ninja powder with desiccated coconut in a bowl.

Roll each truffle in the coconut blue ninja mix, pressing it a little into the truffle.

Store in the fridge for up to two weeks in a sealed container.
