Infusing green tea into savoury meals may take you by surprise at first, but there's a reason it's made its way into comfort food in Japan for decades.
Today, we are sharing our own twist on a vegan pea soup… this one is infused with Matcha Ninja which adds a delicate kick of flavor and a bright blast of color to the mix.
Ingredients

1 small white onion finely chopped

1 tbsp vegan butter

2 cloves of garlic, finely chopped / minced

600g frozen peas

700ml hot vegetable stock, hot

½ - 1 tbsp matcha powder

Salt and pepper to taste
Directions

Fry onion in butter for 4 -5 minutes in a large pot.

Add the garlic and cook for 2 minutes more.

Add frozen peas and vegetable stock to the pot. Bring to the boil and cook for about 5 minutes.

Blend until smooth using a hand blender or place into a high-speed blender. Add in matcha powder at this point and season with salt and pepper.

If not serving immediately and you want to keep the nice bright green color, place into a large jug and submerge the jug in a bowl of iced water right up to almost the upper rim of the jug to cool the soup quickly. Store in the fridge and reheat to serve.
